  迷你香肠小面包


 



这是为小老板学校的年终concert而做的,面包是 kopitiam milk bun。
 
 
迷你香肠小面包
 
 
材料A (中种)
215g          高筋面粉 (215g High protein flour)
2g               酵母 (2g Instant yeast)
125g          全脂牛奶 (125g Full cream milk)
 
材料B(主面团)
92              高筋面粉 (92g High protein flour)
12g            奶粉 (12g Milk powder)
3g              酵母 (3g Instant Yeast)
30g            鸡蛋 半个 (30g Egg - Half of an egg) 
40g            细砂糖 (40g Caster sugar)
1/4茶匙     盐 (1/4 tsp Salt)
45g            牛油 (45g Butter)
 
装饰材料
25根           迷你香肠 (25 nos Mini sausage)
少许            蛋液 半个 (1/2 Egg) 
少许            白芝麻 (Some White sesame)
 
步骤
1. 材料A:把所有材料用手搓均匀,室温发酵4小时。
     Ingredients: Mix all ingredients until even, ferment at room temperature for 4 hours.
 
2. 把所有材料B(除了牛油)放入面包机,把发酵好的材料A撕成小块一起加入。
    Put all ingredients B (except butter) into the bread maker, tear fermented (1) and add it into 
    the bread maker as well.
3. Kenwood BM 250 面包机: ( 用8号面团功能,1小时半),把面团打均匀,在面包机第一次
    搅拌停止后 (搅拌5分钟后会休息5分钟),加入牛油,让面包机继续搅拌过后让面团在
    面包机里发酵1小时
    Kenwood BM 250 Bread Maker: (use function no. 8, 1.5 hours), mix all ingredients in (2). 
    When the bread maker rest after the first mixing (after the bread maker mix for 5 minutes, it 
    will rest for 5 minutes) , add in butter. Let the bread maker do the rest of the work and sit 
    back to relax.
4. 取出面团,把面分为每个20g,把面团搓成长条,杆扁,包上香肠,放在铺了烘培纸的烤
    盘里,盖上湿布,等面至少双倍发大后,扫上少许蛋液,表面洒一些白芝麻放入预热
    烤箱170度烤16分钟,即可。
    Once it is done (after 1.5 hours), remove the dough from the bread maker, divide the dough 
    into 20g each, roll the dough until flat with a rolling pin, wrap in sausage, put in the baking 
    tray, line with baking paper, cover with damp cloth, let the dough raise to at least double 
    size, brush with beaten eggs, sprinkle the surface with some sesame, bake in preheated 
    oven at 170 degree Celcius for 16 minutes.
